I made some really good apple and blueberry muffins that I want to share the recipe for. I have also used this recipe for raspberry or pear muffins too. Really, just use whatever ripe fruit you have on hand and it will probably be good.
Ingredients:
Batter-
1 1/2 cups all purpose flour
3/4 cup white sugar
1/2 tsp salt
2 tbsp baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk (maybe a little bit more)
3/4 cup fresh blueberries
1/2 cup chopped apples (with the skin on, chopped into pea sized pieces)
Topping-
1/2 cup white sugar
1/3 cup all purpose flour
1/4 cup butter, cut into small cubes
1 1/2 tsp ground cinnamon

These have a delicious sugary topping that makes them so much better. And really, about 1- 1 1/4 cups of almost any fruit will be delicious!

1/3 cup all purpose flour

Instructions:
- Preheat oven to 400. Grease muffin cups with non stick cooking spray or use muffin cups (I use spray).
- Combine 1 1/2 cups flour, 3/4 cup sugar, the salt and the baking powder in a bowl.
- In a 1 cup measuring cup, add the vegetable oil and the egg. Then, fill the rest of the cup with milk (it will be about 1/3 cup). Mix this into the flour mixture.
- Fold in blueberries and apples/ whatever fruit you are using.
- Fill muffin cups! This should almost fill them to the top and will make about 12.
- Make the crumb topping by mixing together the 1/2 cup sugar, 1/3 cup flour, butter and cinnamon. You'll want to work the butter in with a fork.
- Sprinkle the topping over the muffins
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
I warmed this up by grilling it in a pan with butter a day later and it was incredible with breakfast (and coffee on the side of course... you all know me). Let me know if anyone else tries this out (:
